How to Make a Traditional Eastern European Honey Cake

Eastern European honey cakes, often called “medovik,” are a beloved dessert throughout the region, particularly in Russia, Ukraine, and other Slavic countries. With layers of rich, slightly spiced honey cake and a smooth, sweet cream filling, this dessert is perfect for any special occasion. Here’s a step-by-step guide to making this traditional honey cake at home.

Ingredients:

For the Honey Cake:

  • 3 cups all-purpose flour
  • 1 cup sugar
  • 1/2 cup honey (preferably a light, mild variety)
  • 1/4 cup butter (unsalted)
  • 2 large eggs
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/2 teaspoon ground cloves (optional)
  • 1/4 teaspoon salt

For the Cream Filling:

  • 2 cups heavy whipping cream
  • 1/2 cup sweetened condensed milk
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions:

Step 1: Preparing the Honey Cake Layers
  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or grease them lightly.
  2. In a medium saucepan, melt the butter over medium heat. Once melted, add the honey and sugar and stir until the sugar is completely dissolved. This will create a smooth, sweet syrup.
  3. Remove the saucepan from the heat and allow the mixture to cool slightly. Once it’s lukewarm, add the eggs and baking soda. Stir to combine.
  4. Gradually add the flour, 1/2 cup at a time, mixing until the dough becomes thick and slightly sticky. If you’re using spices like cinnamon or cloves, add them now.
  5. Divide the dough into about 6 equal portions. Roll each portion into a ball.
  6. Roll each ball out into a thin circle, about 1/8 inch thick, on a lightly floured surface. Use a round cake pan or lid to trim the dough into perfect circles.
  7. Place the dough circles onto the prepared baking sheets, and bake in the preheated oven for 5-7 minutes or until golden brown. Keep an eye on the cakes, as they can quickly go from golden to overly brown.
  8. Once baked, remove the layers from the oven and allow them to cool completely.
Step 2: Making the Cream Filling
  1. In a large mixing bowl, beat the heavy cream until soft peaks form. You can do this by hand with a whisk or using an electric mixer.
  2. Add the sweetened condensed milk, powdered sugar, and vanilla extract to the whipped cream. Continue whipping until stiff peaks form and the cream has thickened to a spreadable consistency.
  3. Once the cake layers have cooled, spread a generous layer of the cream filling on top of each layer of cake.
Step 3: Assembling the Cake
  1. Begin by placing the first cake layer on a serving plate. Spread a layer of the cream mixture evenly on top.
  2. Continue stacking the remaining cake layers with cream between each layer until all layers are used. The cake should have a tall, layered appearance.
  3. After all layers are stacked, spread any remaining cream over the top and sides of the cake. This will help create a smooth, uniform surface.
  4. You can reserve any leftover cake scraps from trimming the circles and crumble them up. Sprinkle the crumbs on top of the cake for decoration and added texture.
Step 4: Letting the Cake Rest
  1. Allow the assembled cake to rest at room temperature for about 30 minutes before serving. This allows the flavors to meld together.
  2. To achieve the best texture, it’s recommended to refrigerate the cake for at least 6-8 hours, or preferably overnight. This gives the layers time to soften and the cream to absorb into the cake layers, making it incredibly moist and flavorful.
Step 5: Serving
  1. When ready to serve, slice the honey cake into pieces, revealing the beautiful layers of cake and cream.
  2. Serve with a cup of tea or coffee, and enjoy this traditional Eastern European dessert.

Tips for Success:

  • Choosing the Honey: The quality of the honey you use can make a big difference in the flavor of the cake. Opt for a high-quality, mild honey that will not overpower the other ingredients.
  • Layering and Cream: The cake layers should be thin but not too delicate. If they break, don’t worry; simply patch them together when assembling. Be generous with the cream filling to get a rich, satisfying result.
  • Resting Time: The cake improves in flavor and texture as it rests. If possible, make it the day before you plan to serve it for the best results.

Eastern European honey cake is a true labor of love, but the end result is a moist, sweet, and deeply flavorful treat. Whether you’re making it for a special occasion or just to satisfy a sweet craving, it’s sure to impress your friends and family. Enjoy!
