Ingredients
For the Crust (Pâte Brisée)
- 1 ¼ cups (150g) all-purpose flour
- ½ teaspoon salt
- ½ cup (115g) unsalted butter, cold and cubed
- 3–4 tablespoons ice water
For the Filling
- 1 cup (240ml) heavy cream
- ½ cup (120ml) whole milk
- 3 large eggs
- ½ teaspoon salt
- ¼ teaspoon freshly ground black pepper
- A pinch of nutmeg (optional)
- 1 cup (100g) shredded cheese (Gruyère, Comté, or Emmental)
- ½ cup (75g) cooked bacon or ham (optional)
- ½ cup (75g) sautéed vegetables (such as onions, leeks, or spinach)
Step 1: Prepare the Crust
- Mix the Dry Ingredients – In a large bowl, whisk together the flour and salt.
- Incorporate the Butter – Add the cold butter cubes and use a pastry cutter or your fingers to work them into the flour until the mixture resembles coarse crumbs.
- Add Ice Water – Drizzle in ice water, one tablespoon at a time, mixing gently until the dough comes together. Avoid overmixing.
- Form the Dough – Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
