  • 1 teaspoon vanilla extract
  • 1/2 cup (50g) almond meal or ground almonds
  • 2 tablespoons all-purpose flour
  • Pinch of salt

For the Topping:

  • 10-12 ripe apricots (or more depending on the size), halved and pitted
  • 2 tablespoons apricot jam (for glazing)
  • 1 tablespoon water (to dilute the jam for glazing)

Instructions:

Step 1: Prepare the Tart Crust

  1. In a large mixing bowl, combine the flour, powdered sugar, and salt. Stir to combine.
  2. Add the cold butter to the dry ingredients and use a pastry cutter or your fingertips to rub the butter into the flour mixture until it resembles coarse crumbs.
  3. Add the egg yolk and mix gently. Gradually add the ice water, one tablespoon at a time, until the dough starts to come together. You may not need all the water.
  4. Turn the dough out onto a lightly floured surface and knead it gently a few times to bring it together. Be careful not to overwork it.
  5. Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes to chill.
