How to Make Sticky Toffee Pudding

Sticky Toffee Pudding is a beloved British dessert, famous for its rich, moist texture, and warm, indulgent toffee sauce. It’s often served with a scoop of vanilla ice cream or a dollop of whipped cream, making it a perfect treat for any occasion. This dessert is surprisingly easy to make, and it is sure to impress your friends and family. Here’s a step-by-step guide on how to make the perfect sticky toffee pudding.

Ingredients:

For the Pudding:

  • 200g (7oz) pitted dates, chopped
  • 200ml (7 fl oz) boiling water
  • 1 tsp baking soda
  • 100g (3.5oz) unsalted butter, softened
  • 150g (5.3oz) light brown sugar
  • 2 large eggs
  • 180g (6.3oz) self-raising flour
  • 1 tsp vanilla extract
  • 1/2 tsp ground ginger (optional)
  • Pinch of salt

For the Toffee Sauce:

  • 200g (7oz) light brown sugar
  • 200ml (7 fl oz) double cream
  • 100g (3.5oz) unsalted butter
  • 1 tsp vanilla extract
  • A pinch of salt

Equipment:

  • A 20cm (8-inch) square baking tin or 8 individual ramekins
  • A mixing bowl
  • A saucepan
  • A whisk

Step-by-Step Instructions:

1. Prepare the Dates

Start by chopping the dates and placing them in a heatproof bowl. Pour the boiling water over the dates and add the baking soda. Allow this mixture to sit for about 5-10 minutes so the dates soften. Once the dates are softened, mash them gently with a fork to form a smooth paste.

2. Make the Pudding Batter

In a separate mixing bowl, cream together the softened butter and brown sugar until light and fluffy. This should take about 2-3 minutes of mixing. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

Gradually fold in the self-raising flour, mixing until just combined. Then, stir in the date mixture, which should now be slightly cooled. If you are using ginger, add it along with a pinch of salt to the batter. The batter will be quite thick.

3. Bake the Pudding

Preheat your oven to 180°C (350°F) or 160°C (320°F) for a fan oven. Grease your baking tin or ramekins and pour in the pudding mixture. Smooth the top with a spatula to ensure even baking. Bake the pudding for about 30-40 minutes in the center of the oven, or until a skewer inserted into the center comes out clean. The pudding should be golden brown and firm to the touch.

4. Make the Toffee Sauce

While the pudding is baking, prepare the toffee sauce. In a medium saucepan, combine the brown sugar, double cream, butter, and a pinch of salt. Cook over medium heat, stirring constantly until the butter has melted and the sugar has dissolved. Bring it to a gentle simmer and let it cook for about 5 minutes, or until it thickens slightly. Remove from the heat and stir in the vanilla extract.

5. Assemble the Sticky Toffee Pudding

Once the pudding is baked, remove it from the oven and allow it to cool slightly. If you’re using a large baking tin, cut the pudding into squares or portions. Pour a generous amount of the warm toffee sauce over each serving of pudding.

For an extra indulgent touch, pour some of the toffee sauce into the baking tin and return the pudding to the oven for another 5 minutes so the sauce soaks into the pudding.

6. Serve and Enjoy

Serve the sticky toffee pudding warm with a side of vanilla ice cream, whipped cream, or custard. For an added indulgence, drizzle more toffee sauce over the top.

Tips for Perfect Sticky Toffee Pudding:

  • Use Medjool Dates for a soft and sweet pudding base. Other dates may work but Medjool gives the best texture and flavor.
  • Don’t Overmix the Batter – Once you combine the flour, mix until just combined to prevent a tough pudding.
  • To Make Ahead – Sticky toffee pudding can be made a day ahead. Simply reheat the pudding in the oven and heat the toffee sauce gently before serving.
  • For a Softer Texture – If you prefer a softer, more moist pudding, cover the pudding with foil while baking to trap steam.
  • Customize Your Sauce – You can add a splash of rum or whiskey to the toffee sauce for an extra depth of flavor.

Sticky Toffee Pudding is perfect for cold evenings or as a comforting dessert for any special occasion. The balance between the soft, spongy pudding and the rich, gooey toffee sauce makes it a treat that is loved by many.
